Life has been purposely hectic and these greens were hecka refreshing and simple to make! I added a splash of Braggs to my individual servings. The Kind Diet isn’t a book I’ve cooked a bunch from, but I find reading it inspirational. I wanted something different for my collards, and well, how could I go wrong with a combination of my vegan and Sicilian roots?

The Countdown to Portland’s Inaugural Vegan Iron Chef!!!!!!!!

Who are you rooting for?

In just over a week, Portland will crown its inaugural Vegan Iron Chef!

On behalf of the organizers, can I just thank the Portland and internet vegan community and our generous sponsors and dedicated volunteers and host and Vegan Alton Brown and Judges for supporting this? A million times over! The effort has been amazing, challenging & SO worthwhile - and I’m already thinking of it as a miniature version of what’s to come next year! Real kitchens! Stadium seating!?!

The Competition was one hot ticket and quickly sold out within a couple days!! If you didn’t get a ticket, you’ll still be able to watch Portland vegan  history unfold by viewing our stream online LIVE or heading to vegetarian Backspace Cafe early to watch it on their projector.

Backspace is also the location of the FREE After-Party, featuring an anticipated set by Camping Party, the return of DJs Surival Skilz & The Jet Boat Adventurer, exciting raffles and light refreshments, including more sampling by Wayfare Foods.

Bake Sale in the rain

The scene: Last Thursday on NE Alberta, in front of the Green Microgym

The event: Worldwide Vegan Bake Sale Fundraiser for Try Vegan PDX & Vegan Iron Chef, one of 120 international fundraisers during the time period!

The goodies: adorable and delicious!

Special guest appearances by: a rainstorm and the Last Thursday roaming health inspector.

The volunteers: wet, but really dedicated!

The rain and Last Thursday health inspector tried to keep us down, but we prevailed!

Credit goes to the volunteers, their umbrellas, and quickly moving everything that wasn’t in cookie form into the Green Microgym after the threat from the health inspector.

World Wide Vegan Bake Sales, Approaching!

What vegan doesn’t love a vegan bake sale?  I would say the gluten-free, but as Portland is getting glutey-free friendlier, there’s usually *something* GF at vegan bake sales now, right? At least a nice attempt!

This is the second year of World Wide Vegan Bakes Sales, which brings about vegan awareness, vegan treats, and community.  They’re a new tradition on an international scale – independently run, vegan, happy, and were recognized as the VegNews “Veg Event of the Year” in 2009.  There’s a snippet of the article on Bjorked Off!, featuring Evan’s picture of Mint Chocolate Oreo Cake and I do believe, famous danishes in the corner.

Portland!

When: Try Vegan PDX is hosting the only bake sale listed in Portland during Last Thursday on Alberta on Thursday, April 29th.  It will be between 4pm-9pm in front of Green Microgym on 12th and Alberta.

What: Vegan Baked Goods! Sweet, and possibly, savoury.

If you’re interested in donating, please drop off baked goods between 4-4:30pm.  If you’re interested in baked goods, please stop by! Sweetpea Baking Co. will be donating, as well!

Why: This bake sale is a fundraiser for our upcoming Inaugural Vegan Iron Chef Competition in June (it quickly sold out! but you can still come to the free after-party at Backspace, and watch it online later!) and our 3rd Annual Try Vegan Week in late August (ending with the 3rd Annual Vegan Prom! Stay tuned for details).
